It's because he gives the enemies high enough stats to actually kill the player. That's the only reason. Plenty of studios put out games that have better gameplay than From's games but they're all soiled by the stats being balanced like the people that play them need water wings to get in a kiddy pool. DD2 is a recent example.
It's literally the only thing Fromsoft does right that everyone else does wrong. They put out a fricking "open world" game that was just some maps dotted with static mob spawns and a bunch of teleport checkpoints and got sucked off for it because that static lobster spawn in the middle of that indistinct field shoots a laser beam that instantly kills you.

He understands what makes games consistently engaging and exciting. I'm not gonna say "fun" because there's a billion games more fun, creative and varied than souls, but his games are enticing because; they make every input very important (long ass animations and recovery) while the player is constantly a moment away from a fail state (high enemy damage and some instant deaths). This requires the player to always pay a lot more attention than some other games to achieve success (or moreso avoid failure).
The games aren't that hard, but they want to significantly punish mistakes so players take it more seriously in the moment.
I can see how some find this dull, tedious or plain boring but for me and evidently a lot of other people it's exactly what a certain flavour of single player game needs to be.
However people imply every game should be more like souls, or that they only enjoy Fromsoftware games are posers and a blight on gaming discussion. The games have their own space and occupy it well.
Most of From's games are bad games that people trick themselves into think they're good.

It's accurate. The masterful design decision to make Bloodborne run at 10fps causes enough latency to make you spam Circle or R1 a lot less.
