How do you feel about starters being stand-ins for “easy, normal and hard mode” in the early game?
For example, both Charmander and Chikorita are weak to the first two gyms in their games, so picking them is sort of like choosing hard mode. Bulbasaur meanwhile is strong against both of his gen’s first two gyms and Squirtle is good against one. Anyone who picks Bulbasaur will be able to steamroll Brock and Misty with him alone quite easily. After the early game you generally have more options with the different Pokemon you catch so it becomes less important what your initial choice was.
the games are all incredibly easy and usually intentionally give a solution to the next boss in a nearby route any ways so it's pointless

Charizard has guaranteed crits with Slash while not being stuck on one of the worst offensive types in the game.
Bulbasaur is easily the best Kanto starter.
Chamander is normal mode, Brock has no rock moves and they even give Charmander Metal Claw starting in FRLG literally just to have an SE move for the gym.
Most starters deal with a gym being strong against them so it's a stretch to say Charmander is hard mode when Squirtle has to deal with Surge and Erika while Bulbasaur needs to deal with Blaine, Koga and Sabrina.
Chikorita is actual hard mode due being weak to Falkner, Bugsy and Pryce, but also being resisted by Claire, Jasmine and finally Morty who uses Ghost/Poisons.

I don't think it's the starters themselves that decides how easy a playthrough is. I think it really just comes down to your team building and moves used that determines the difficulty in the playthrough.
