For me, it's the Super Star Wars trilogy, Star Wars Episode 1 Pod Racer, Rogue Squadron I and II, and Dark Forces.
Holy fricking based. Rogue Squadron 3 had a mediocre single player hut having the entirety of the second game in co-op was amazing.

I dunno, I've played just as many Final Fantasy games and only come across 1 I liked. Zero Mario games for having tried a similar amount.
