Make her Waterfowl only trigger when you're a certain distance away. Then it's more of a punish for getting hit and roll-spamming away to heal. Probably need to make her other moves better at getting you to frick off to compensate. The Bell-Bearing Hunter is a great example of a boss that does this with dangerous close-range moves and then tricky long-range ones.
Make her poise work by Friede's rules i.e. you can stagger her for a set amount of hits before she automatically escapes instead of her moronic OC donut steel hyperarmor that can activate whenever however to break or avoid stagger.
That or nerf her health by 40% in both phases, she way overstays her welcome.

Also having to use a shield isn't cheese, but you should be able to beat her consistently without one and I can't I can dodge the second half of waterfowl if I have enough space but the first part if I'm too close I still die to that even after watching tuts on how to dodge it.
Other than waterfowl the fight is nothing special, if she didn't use waterfowl I'd say Radagon / Elden Beast is the harder fight, its only because she pulls that move out you can get fricked up so quickly, everything else she does is incredibly telegraphed and she can be staggered and interrupted too, though its a shame staggering her isn't consistent, I've never bothered with trying to parry her myself that seems like too much effort as you need multiple to get a riposte.

Waterfowl isn’t even hard to avoid, even without the weird circle strat. Just don’t panic. The fricking scarlet Valkyrie move can go straight to hell though, there’s zero reason as to why the cloud she leaves as she jumps up should do so much damage on top of sprouting clones to make sure you’re stunlocked.

Change the fight so waterfowl only triggers 3 times in the fight, first time under half way of first health bar, once at 3/4 on second healthbar after she slams into the ground on the start of the second round, once again at 1/2 health on secound healthbar
I died so many times to waterfowl just because she uses it randomly if she used it at set parts of the fight you could anticipate like Radagons hammer AoE 3x slam attack it wouldn't even be an issue but because its spontaneous so often if you can't dodge it or are far enough away from her when she suddenly leaps up to do it then you die. Also using frost pots is cheese so that's not a valid technique.
Literally just make her do a little backdash before using waterfowl, something similar to what she already does after getting hit twice. Thats it, just creating a tiny bit of distance to make dodging the first wave of the move more consistent and it would bump her from A to S tier boss for me.
Well, that and give a better (rot related perhaps) reason as to why she heals on contact, maybe she is like a mushroom/plant that grows stronger when watered, in this case with blood, force of will is fricking dumb.
