If you gave it Sunshine or 64 movement, you'd have to also make Classic Controller or GCN Controller an option. Mario's Galaxy movement already sucks enough on Wiimote+Nunchuck, whereas he's at least pleasant to control with the Classic Controller hack.
the level hub would blast you off to the levels seamlessly, some levels would blast you to other levels during them, no mission/star selection screen ever.
the game is now even more of a spectacle/tech demo, enjoy.

It's been a long time, so I forget - did Star Bits even actually do anything meaningful besides feed hungry Lumas (I don't count stunning small enemies as "meaningful")? If not, I'd replace them with Coins and treat them exclusively as currency. Add more to levels to make up for the deficit left behind by Star Bits, and just make them grabbable by contact. Get rid of aiming and shooting altogether.
To add to this: MAKE THE RIGHT STICK AN ACTUAL CAMERA CONTROL. The lack of real camera control in the Galaxy games really contributes to how "off" they feel to play compared to 64/Sunshine/Odyssey.
What a good idea it was to make a sequel to this game. It sold so well that it was the best-selling 3D Mario, so it made complete sense to iterate on it with a direct sequel.
I sure hope Nintendo continues this line of "acting on obvious good ideas", especially if they make another 3D Mario game that sells even better in a way shorter span of time.

I never had this problem in Mario 64, but Sunshine and navigating Rosalina's space station both made finding levels without looking it up online a pain.
