Just hit them and walk backwards. Most of the basic mobs only have single attack patterns that are easily avoidable. All you need is to get used to the range of their attacks, as well as your own. Try to pull one mob at a time and avoid rooms with many ranged enemies.
Best way to deal with archers is to get a ranged weapon of your own, otherwise you have to dance around them, which is really annoying and takes forever.
Also don't bother with blocking in pve.
