Yes and no, it's hard to say. He's done incredibly well for himself and he is always incredibly humble about it. I don't know if things like story writing, music and coding naturally come easy to him, or if he is just being humble. Being so incredibly humble can kind of be disheartening especially when you're very inspired by his work and you'd like to create something akin to it but keep falling short. It makes you feel inferior and that you should be able to do these amazing things effortlessly like him, but even with all the effort you have you fall short.
He might just be being incredibly humble and in reality his has his own struggles, but it's hard to see that as the case when everything he puts out is really good, even his "crappy rom hack".
I'm pretty sure both him and Andrew Hussie are on good terms as he still makes a lot music for him. I like to believe he's just this lovely guy that has a passion for video games and music, who isn't trying to humblebrag. I understand why he would do that, he's talked before about being scared about the sheer amount of his success so it makes sense he'd try to be over humble. Sometimes his success inspires me to keep going and keep trying at what I do, but sometimes it makes me feel like I will never reach where I want to be. If he is being humble, I wish he would be honest and say if he has had a hard time getting to where he is now, it would certainly make me feel less bad about my shortcomings.

To be fair, Undertale may have been seen as a sleeper hit that became successful out of nowhere, but by 2015, the demo was out, there was hype behind it, and there was a dedicated Kickstarter that showed off more.
And the real smoking gun is that because of Homestuck, Toby had a VERY passionate fanbase prior to Undertale, and had connections to numerous people. He was far from a nobody. Toby had a sizable foundation to work off of when Undertale came out. This is something that is virtually impossible nowadays.

I do feel that maybe if Toby admitted to having struggles, his humbleness would come off as more genuine to me. It seems like he's just this perfect auteur with masterful talent that can do no wrong, and the only wrong you can say he's done can be shrugged off as "Oh, he was a teenager" or "Oh, he was a part of the Homestuck team". As if the only evidence of weakness or struggle was before Toby found his destiny.
Call it envy, but it's hard not to be a bit jealous of this guy considering that he's pretty much seen as a god, but he definitely doesn't strike me as a god complex type. I agree with you completely. I hold no disdain toward the man at all for it, I only wish that the representation of himself he presents was more reasonable. Everyone's human and I refuse to believe he's never had a hard time whilst trying to do what he does, it really would give me some hope to be reassured that it's not as easy as it appears. Any role model isn't flawless but sometimes it can be hard to see them as so, especially when they're not open about it.
In spite of it all, I'd say the guy still strikes inspiration in myself. He inspired me to learn piano and make music years ago and I wouldn't be where I am now if not for him. I'm sure though, that with enough time, effort and determination haha, one can achieve whatever they set out to do.

I read somewhere that Toby is an obsessive workaholic to the point of putting his health in danger. The reason Undertale came out as soon as it did (in spite of Toby getting help) was because Toby would work 12-hour days on the project. On one hand, extremely based and admirable, but on the other, holy fucking shit. I don't think Toby can really/has ever been negative, pessimistic or depressing, and even the Halloween Hack is more just edgy teen ideas than anything, but the man does not know his own limits.
I wouldn't be surprised if that was the case. He's fucked up his wrist and needs surgery from over working himself. That still hasn't stopped him, he's using voice navigation tool to still work. Considering he was very close to Andrew Hussie, who would work relentless hours just like that, it seems likely.

It's weird, it exists in this middle ground where the mixing is really simplistic but at the same time it still sounds alright. I don't know if that's just the compositions carrying it, but there isn't a whole lot of layering in his music so there doesn't really need to be.

Rent free. Tumblr was not that large or influential at its peak, Undertale had a broad appeal considering how even normies knew the game, and Shovel Knight is great but niche game. Get a grip.
I think Undertale lasted because it of its aesthetics. Like Undertale's art or not, you can't lie that it has a distinct style. Shovel Knight is a great game but every retro throwback game more or less looks exactly like it.
It's mostly down to the characters and story. The cast has been shipped to hell and back, and the fanbase at the time was rabid and the story was ambiguous enough in the right places that you could entice loregays to spin off exposure for you. There were like a dozen AUs that were all shit. You could barely escape it for a good while.
It had nothing to do with gameplay.
