Civ 5 is pretty simple and easy to get the hang of imo, it doesnt take too long to get good at it. But you need all the dlc (which is in the complete version) for it to be really fun.
iirc the fan favourite civ is 4 but i havent played it.
Civ 6 is a bit harder than 5 to get the hang of, but its still pretty rewarding and fun, I think I prefer 5 most of the time but 6 is definitely fun.
If you can only play one, I'd say go for 6. There's a lot of simple things you miss if you try going backwards. I loved 5 quite a bit, but it's so hard to backtrack.
