After you reach the end game you'll maybe spend 10 minutes a day on any of them. So it's not impossible to play both
This is pretty much all gacha games. I keep adding more to my bucket because of this. I just get screwed when suddenly all of them decide to drop an event or something right at the same time.

You could give both a try. Shart rail is easily played as a side game and won't take up too much of your time as you can put resource farming and chores on autobattle mode

Starrail is a one button jrpg. I don't think it's even possible to die. It has the better story since it's more linear
Genshit is a BOTW clone without Nintendo Magic, it's bigger, there's more to do but it's all the little stuff you love about BOTW
genshin has better girls, but rail will save you even more time since its auto battle so most of the time you don't even need to "play it". "ah just got back from work, i'll just auto battle while i do the dishes and shit". genshin you gotta play to grind the shitty artifacts
