Yeah, the perspective is just something that probably doesn't lend itself well to Sonic's style of platforming. Its hard to imagine making a full game from it and making it fun at that.
Yeah it seems to make the level design feel very claustrophobic. I'm not sure if 5th gen hardware is even capable of doing 3D Sonic justice. I think even the devs realized it cuz at some points during Xtreme's development they were gonna do 2D sections like modern Sonic does to hide how shallow the boost formula is.
As for as "what if Sonic was on Saturn" goes, Sonic Mania scratches that itch because it plays into the strengths of Saturn hardware: 2D. Reviving Sonic Xtreme feels like nothing more than a weird novelty, like porting Mega Man to Atari. No disrespect to the original developers who suffered through this game but some dogs should just be allowed to rest.
I don't see why - if you're bound to say, a sphere, and you can move on rails to circumnavigate it by pressing either left or right to rotate to around, or towards you to move farther away from it, forward to move closer, what exactly is the big deal? I see it as an extension of 2.5D games like Klonoa or Tomba at that point, just taken to a geometric extreme. The only moronic thing they could really do is if they made it to where you could fall off those single block platform rails, but assuming the character is "locked" to those while on them, I don't see a problem. Half the time when doing loops and elaborate movement in Sonic games you're not really controlling what's happening that much anyway.

Descent was fricking sick, I was gonna say they woulkd never make it today but they did make a spiritual successor that controls and plays the same just with modern graphics not that long ago, forget what it's called but I liked it.
I just have never had a problem with weird motion or physics or perspectives, I don't get it. I like playing around with jetpacks in VR Chat and just doing stunts for hours while listening to podcasts and shit, its fun. If these people had their way I wouldn't ever get to ride a tilt-a-whirl again.
having played fisheye quake (https://strlen.com/gfxengine/fisheyequake/) as a joke i can tell you there are a rather limited amount of people that would play for a long period without getting sick.
it might be a cool effect as something temporary but i really cant see a good decision in game design for a blockbuster to have that on all the time.
