Think the last one I saw was Toy Story 3. I was happy finishing there
Toy Story 3 was their last good one. Everything prior to it ranged from good to classic (yes, even Cars).
Since then it's been an endless stream of shit or mediocrity at best.
As others have said, Toy Story 3 was the last truly good flick. Then it was all downhill after that. Coco and Inside-Out were decent, but nothing special. Soul had an interesting premise but squandered it (not really sure who it was for, ither.) Meanwhile the rest was/has been garbage.
Why the everloving frick did they even use Buzz in that travesty?

I watched Buzz Lightyear of Star Command from start to finish a few years ago. It was still pretty good.
