Depends on the build you want, but the benefits for any particular class are marginal. Choose the class with the highest stats in the stats you plan on leveling up.
It has dogshit mouse supports, game looks stuttery when you use a mouse and the sensitivity on x/y axis is shit. Better off with a controller. So it is playable but wouldn't recommend it.

Middle tier (not actually special in anyway) : bandit, warrior
Challenge tier (starting hardmode): wretch
If you want to stat prostitute for competitive dueling at a certain level that's going to be something else, where you want high stats in what you're going for but dump stats in things you don't need at all. If you're going to level up everything to really high levels then it doesn't matter except for having a stronger start.
Anyone can use anything. Your class basically doesn't matter. It only affects your starting stats and gear.

"Class" just means starting stats and gear. The stats will point you in a certain direction but you level up to about 100 by the end of a standard playthrough, so you can change course. As a first timer, starting with Prisoner is my suggestion. A nice mix of sword fighting and magic to learn how each type works. Samauri would be my second suggestion, the katana is the best starting weapon given to any class. You will pick up spells and miracles (faith spells) and weapons throughout the world, and you can respec later if you want to change the course of your character. Also, you probably want to dump most of your first levels into vigor, which ditactes health.
Sword as shield, no. But you can use a few daggers as parrying off-hands (and a few rapiers) which means rather than blocking you press a button on the right frame to parry certain attacks. It's difficult, I probably wouldn't suggest it for a complete beginner. Dodge rolling is the main means of not taking damage, but shields work fine. Dual Katana samauri is an excellent first character and is probably something you might like. You can add int later for spells and some fun weapons.
Prisoner is ideal if you want to use sorcery and don't want to use faith based magic at all (faith is very low). The prisoner's starting sword is quite good. If you go really into intelligence the prisoner can be a damn fine mage with a magic enchanted sword.
Samurai starts out with better armor, a very good sword, okay stats. No starting magic, so you have to find someone to teach you and sell you spells and an item to cast with, and also raise your casting stats to the point you can cast something. Consider using Vagabond who is more strength based, starts with a shield, and has slightly more versatile stats.
Hero specializes in high strength and really low intelligence for a no sorcery build, but instead you could build towards faith incantations. You could keep strength around 16 to 20 and go heavily into dexterity.
If you are going to grind for really really high level and be able to do anything then just start with whatever is interesting and strong for your starting playstyle.
can you even get that headgear without picking prisoner? vagabond armor you can get near the fire giant i think but i don't remember seeing the iron mask at any of the merchants
