The one you posted. I'm in the post-game and team building is just too fun. It also has many new mega evolutions with fun gimmicks.
Most romhacks are autistic tier of competitive team building just to go through the game and suffer from garbage plots (although it's the least problematic part). It's hard to find one that strike the right balance between the "too easy" from official games and "moronicly autistic" from romhacks. But some of them like your pic do.
All Pokemon romhacks are "too easy."
radical red is fun but the dev constantly going in and patching fun strategies is annoying.
Oh this pokemon is a really good counter to a gym? Get rid of it until super late game.
This early game flying type is good? Make it evolve at level 60
Uh oh, people are pre-poisoning their pokemon for guts/facade shenanigans? Heal them before all boss fights
Seems like they're less concerned about making challenging and thought provoking battles and more concerned with just making it as hard as possible, especially when people start using megas before you do.
Really the only "difficult" Pokemon game is the Pokemon Emerald Roguelike that was recently released. Every single single player mainline Pokemon game is piss-easy. Even the kaizo games are only difficult if you go in blind AND are doing a Nuzlocke challenge.

Still too easy. You have to put lots of extrinsic challenges like Nuzlocke, don't use items, don't overlevel, don't use STAB, don't use SE moves, don't use status moves, etc. for any Pokemon game to be a challenge.
Just play Gaia, everything else I've played has glaring flaws except Gaia.
The best one I ever played that felt the closest to an actual release was Sacred Gold/Storm Silver.

Hopefully those have post-gen 4 mechanics. I refuse to play any Pokemon game where Waterfall is a fricking Special move.
Its generally considered that the roms made by Drayano are the best made ones. My personal favourite is Renegade Platinum, but ive heard people really like SacredGold / StormSilver. They have increased difficulty and MUCH better variety (at least 10 different pokemon in each route), and actually well thought out enemy teams, making them interesting to nuzlocke, or if you wanted to play more casually, each of his romhacks has every single pokemon obtainable. In SacredGold / StormSilver, the overall goal is to catch every pokemon so you can go get Arceus

Drayano's hacks have the perfect difficulty tbh.
You can't make them better because at the end of the day, it's still a children's game.
The only ones i know of that increase the difficulty past that are the Kaizo games, but honestly, Drayano romhacks feel great to nuzlocke. If youre finding them too easy, some guy was doing a thing where each time he finished a nuzlocke, the pokemon he used to beat the E4 were ''locked out'' and could never be picked up again. It would be interesting to see how far you can go with that limitation.
That just depends on how many starters you can choose from. If you hack it to allow any arbitrary Pokemon line to be your starter, that's 524 different runs you could do.
EDIT: Maybe 523, as many games are impossible to solo with a Ditto.
Ditto is doable if you have more than one.
Even with 2, it is impossible in anything with Gen IV+ mechanics.
PokeMMO, all the trainer battles including gym leaders and E4 are juiced up with a better AI and much better move pools.

Has level caps and a hard mode so it's still challenging, while being a completely new game
Inclement Emerald is great if you just to replay emerald but harder
Unbound is a bit story heavy and its gyms absolutely suck, but by god it's the most polished romhack I've ever seen.
the only ones I've played are vega and crystal clear, they were both fun
The Drayano hacks are worth it just for the QOL changes included in all of them. The difficulty is more challenging than vanilla, but it doesn't demand perfect teams and EV/IV autism like some of the more difficult hacks.
Pokemon INSURGENCY. Nothing else compares.

Wow NOBODY is saying the single greatest romhack out there? Pokémon SUPERNOVA SUN or the other one I can't remember. Bar none the best experience you'll have playing Pokémon and far more challenging than anything I've ever played in the history of Pokémon.
