I'm playing the original FF7 to prepare myself for the remake and I was wondering, so people told me the entire remake is within Midgar, but I just left Midgar after just a few hours, how do you make an entire JRPG out of that?

They pad it out more. There's an entire DLC thing they added in later focused on Yuffie. Personally I enjoyed every second of remake. And after finishing it I had zero desire to continue Square's wringing of FF7's neck for another two plus DLC games. Probably more knowing them. I'll wait for it to be complete. However many years that'll probably take.

I actually believe you're right it'll end up mostly being right up my alley considering how much I enjoyed Remake. I just know they're gonna drag this shit out which deflates any interest I have in keeping up with it until it's done. I look forward to playing it someday.
I'd say Rebirth is much less "paddy" than Remake. It has a lot of padding, don't get me wrong, but it's not really prolonging story bits as it is adding more or spending more time on deviations. Like there's no sequence when you're running back and forth through the sewers 3 times and running headfirst into some random Shinra lab/train graveyard. The padding comes through typical Ubi open world shit, not really the story.
i did pretty much everything in Remake and the only thing ive absolutely hated in playing through was Cait Siths part. thank god that segment wasnt that long but at the same time felt too long.
in some ways I would also say Zachs parts as well but didnt really mind it since it just adds to the story and they actually give you an option to skip all of it for it in "new game +".
even though I generally enjoyed Remake, there were just way too many parts where im just gonna loath playing through if i ever play through it again.

By extending a lot of scenes/areas, adding cut characters, adding new characters, and lots of side quests to pad everything else

Remake and Rebirth are almost two different games. Midgar is more linear and hallways, while Rebirth features huge open world. If you put them together in one game, it would look very jarring.
Despite the criticism about the changes, the devs were right about this.
Imagine if Midgar actually was a city and not 4 separate screens with random encounters on them.
