I'm pretty sure I want to get into shmups, because I want a hardcore skill based single player genre to really get good at, but so far Daioujou isn't grabbing me. Apparently it's one of the best shmups so I thought it was a good place to start, but I'm not enjoying it.

You're playing bulletslop CAVEshit, no wonder it isn't grabbing you. Even among CAVE games, DOJ is overrated dogshit. CAVE's best games are Donpachi, Dodonpachi, and Dangun Feveron.

I thought I wanted to get into shmups, but it was really more that I liked some of the things that shmups and arcade games do better than most other games. I find many games are bloated now and don't really focus on the gameplay. That said, after trying a few shmups I really bounced off them and moved on to other games I actually do enjoy instead of trying to force myself to play a genre I just wasn't enjoying at all.
Go play Mars Matrix.
Starting with that one is pretty bad, REALLY fricking bad if you've never delved deep at all it's like if someone recommended you the most autistic version of Linux as the first thing to use besides Windows.
Drop it instantly if you're not feeling it and play DoDonPachi 1 or 2 and then you will figure out if you like this kind of game at all, they are worth the hype if there's anything about the genre that clicks with you that's the advice I can give as a giga tourist that went from playing older touhou games in normal difficult straight into DoDonPachi.
If you want something less arcadey and with a good enough progression system besides just the levels themselves play Tyrian 2000 it should keep you hooked for a few hours while not feeling like you're grinding a game at all if that feeling kind of bothers you.
the best shmups are not necessarily the best for beginners, on the contrary, many have the esteem they do because they are so uncompromising
if youre baby new to shmups then touhou easy/normal is unironically a good intro to shmups as long as you dont spend too long on the series at the expense of the wide variety of games
if youre already pretty good at action games then play a console or pc shmup that stands out to you, ideally one with a practice mode/stage select. an arcade title let alone a cave one is probably overkill for your first clear.
