I'm trying to decide between triangle strategy and fire emblem engage. which one has better story and gameplay? I only played FE3H, will I be missing too much for not playing the old FE games?

Triangle Strategy has the better story. Engage has the better gameplay.
As for only having played 3H. Engage does reference the entire past FE franchise pretty much. But they also summarise most of those adventures. And have paralogue missions and bond events that elaborate upon said characters and games. If anything not acttually being fully familiar with them might make them come across as more mythical or special maybe. If anything, if you're fully familiar with all the games, parts of the repetition going over the past titles can feel a bit grating maybe. But it's cool. And the gameplay really is great.
Triangle Strategy is basically Game of Thrones the videogame very crudely put. Hate referencing Game of Thrones but pointing to it tends to get the point across.
The game has multiple factions and you have influence over who to ally with and how. And it all have pretty significant consequences. But the actual strategy combat, while unrelenting at times (at least if you don't accept any characters deaths) might not be too elaborate. But it gives you tons of chess pieces to work with and is no doubt serviceable and can certainly be very captivating at times.
I don't know. It's a bit difficult to pin the games against each other. They are pretty different but they are both really good.

3H DLC really was pretty difficult though? Compared to the rest of the game at least? I fricking loved it though, it was exactly what was missing from the main campaign for me. Will I enjoy Engage's gameplay then?

Yeah. Short as the DLC is I actually really like the DLC and consider it considerably better than the main game. For while it lasts anyway.
I just phrased my post the way I did because they didn't just find the DLC difficult. They blamed the game for their own shortcomings, calling the DLC dumb and poorly designed. And that's just kind of pathetic.
I am not even saying there aren't legitimate criticisms to be made, but their criticisms largely weren't and they were almost all completely invalidated by the complete jokes that were their own playthroughs of the DLC.
And it's not exactly as if their analyses of Engage has been much better.
The DLC is what 3H would be with more time on the oven, it's sad to think Engage just had to do this with a slightly better representation and it got off the rails with the Vtuber campy shit
Story and Gameplay are very interwoven in people's opinion on RPGs.
A bad story for a lot of them can detract from the gameplay.

3H is like pong and Engage is like Space Invaders
They’re both really good. I recommend getting both but start with Triangle Strategy and emulate an earlier Fire Emblem to see how you like it.
Maddening Engage is easily the most fun playing a fire emblem. Too bad the story is extremely boring and the character designs are fricking ugly and the soundtrack sucked.

I also really love the smash weapons. If they don't return in future games I'll be really disappointed.

Frick. Uh, Pokemon Conquest (no but seriously, it's pretty decent).
Fell Seal: Arbiter's Mark is another really good one, kind of in the vein of FFTA, but with actually fun team building and fights.
Vanguard Bandits if you like the sound of knights piloting mechas.
Disgaea if you're more interested in puzzles and making super OP units than actual strategy.
Shining Force series is another really good one, kind of similar to FE.
Yggdra Union or better yet Gungnir for something unusual and interesting, if somewhat fricky.
I'm assuming you already know about Tear Ring Saga, Berwick Saga and Vestaria Saga since you mentioned FE? If not, they're pretty decent if you liked Kaga-era FE.

TS is definitely Utility, while Engage... Liberty, I guess? I fell like that fits.
The story in Engage is pretty terrible, the characters are just phoned in generic cookie cutter tropes. You wont get any nuance like 3H. It is however more complex and more fun to play but personally I cant stand the vtuber designs and horrible voice acting.
