Fallen Eagle is great, and I'd say the closest representation. My only issue is the united tribes on the northern frontier, e.g. a single Alemanni realm instead of lots of little chiefdoms, but then I guess that's for balance.
I liked it for having og map with ability to restore whole empire but winter king does everything related to that larp way better(shame they didn't at least add Italy and Spain before dropping it)

You are forgetting WTWSMS mod for CK2.

I like WTWSMS because it has parts of the map I want to start the game at.
It's as accurate as any total war which is basically Saturday morning cartoon level but it's better than anything else out there.
