Rapiers are actually damn good in Souls games except for ER. Fast attacks mean counter damage galore and you can attack while having a shield up. Sorc with Velka's rapier in particular is pure kino in DS1.

there's tons of good dex weapons and buff spells, bloodflame blade is a great one that procs bleed

You can also buff weapons with consumables, which are very strong in ER. I find it is far more efficient to focus on one damage stat for the first playthrough since the softcaps are so high, but a few points in faith can also grant access to a lot of very useful utility spells.
But so are the people going on about MUH SNES (snoozefest) GAYMES or whatever. Those were largely only ''''difficult'''' due to limited lives and no or few saves. Any modern game with an ironmode or the like blows them out of the water for that reason alone. And even contemporary shit like Super Meat Boy is mechanically harder than those old ones.

Retrieving your lost souls/runes typically isn't a problem since it's set in a big open world where in most cases you can easily swoop in to grab em on your mount and leave unless you're in a linear dungeon area and there's always opportunities to build your character without having to grind the same area repeatedly.
