Depends on how you define RPG. If you define it simply as "numbers go up", then it's very much an RPG. If you put emphasis on the "role-playing" aspect, then it's not an RPG. But then again neither are most JRPGs.

i played all the way through on hell, sometimes its frustrating but most of the time its fine

Compare the ST costs before and after. It gets reduced by I think 10%. Maybe it's also somewhat stronger but I'm not sure about that one

Block his attacks. Maybe grind a bit more if you really are getting your shit rocked. Nushi is really nothing worth mentioning.
Well you can't grind after beating the Goblin King afaik, but you're right that he's not that bad. I got his number after a few tries. Much like the Capra Demon in DS1, he forced me to remember that I have a shield, which is ultimately good for me.
Yeah early game you rely a whole lot on your shield. Later with levels you can ditch it in favor of magic and dodging and just outranging stuff with bigger weapons (not that you should stop using shields, at least to get their skills).

Maybe not the first time you unlocked it since it would be too difficult, you're supposed to do it later before the point of no return IIRC.

They aren't. You don't need to max it, though but the vast majority of progression comes from drops so anything you can do to increase that is recommended.
This game is good if you want a metroidvania, but you need a constant slog of backtracking, grinding, and a 5 minute wall of text every 20 minutes or so.
