What I can say from experience is shmups are a fun genre, but not every single shmup is going to be a slam dunk. If anything they are more of a fun distraction from your mainstream platformers and action games, not the main course. Recommend starting with something simple and easy like Twinbee or Gun Nac, or maybe one of the Touhou games.
Best thing here is Sapphire imo. Also Stellar Assault is a very good game but it's not really a shmup

There's an interview where one of the devs explicitly states that V.V/Grindstormer was the first game they made with autofire. Autofire completely breaks Zero Wing by making green homing comically overpowered.

yeah it's pretty good genre. You don't have to be insanely good at them. The genesis and pc engine are a good place to start with stuff like Gleylancer, thunder force 3/4, and musha, and for pc engine air zonk, blazing lasers, or soldier blade. It's okay to use continues and autofire just starting out and try to have some patience. Stick with the game for a couple hours before trying the next one.
SHMUPS get better the older you get. When you want to sit down and play a game for a little bit while getting the full experiece out of a game. It's the genre to do that with.

Autofire wasn't the only way to play the game, but developers knew that a large portion of the Japanese playerbase (and vast majority of superplayers) were using autofire and they balanced their games around it, showed autofire in attract screens, and controllers for shmup/arcadey games had built-in turbo. By the 90s, autofire was basically universal.
And regardless of developer intent, the shmup and arcade community has collectively decided that mashing is awful for numerous reasons, so the collective decision was to allow autofire in all forms.

Not for the games we are discussing here. West was big in the golden era, and then in the 90s a lot of fighting games, a lot of lightgun games, a lot of racing games. Ask a western player about an arcade shmup, and like 90% of them have only ever heard of Raiden (and like 1% of them could even get past stage 2 on a single credit)

the single fire games couldn't be cheated most of the time tho, most of them have 1 shot limit and are based on having a lot of damage in one shot rather than being based around constant focus, they are different experiences which use different points and in both cases in most machines didn't affect the experience and made it better, even if it was to a much lesser extent on classic shooters.

h) many Japanese cabinets even in the mid-late 80s had autofire circuit and developers knew this (attract screens would feature inhuman levels of autofire). Also, PCE (shmup-heavy platform) and NES Advantage had built-in autofire in the mid 80s
i) autofire is the Japanese standard (and has been for many decades) adopted by vast overwhelming majority of the Japanese arcade/shmup scene, and even a large majority of western players.
j) emulation, along with almost all future ports, support autofire.
k) autofire creates consistency across runs and consistency within competition.
l) autofire is openly stated when a run is recorded, and mashing scores are separated (depends on the game, many have scores merged).

Because autofire was a thing doesn't mean all games after that were designed for it. If you keep on the Famicom example, for the longest time only 1-2 companies factured the autofire controllers, so it's not like other companies would want to sell products for their competitors.
Being able to press buttons fast, consistentally and for a long period, is a skill that used to be the norm for those games so they were designed around the idea that any SHMUP player should be able to do at least 8-9 BPS.
The modern take is to think this means "it was designed for auto fire" because that skill has been long lost long the years, it's the exact same thing as people claiming "this action sidescroller was made bullshit on purpose because of rentals", that is to say a revisionist cope, a generalization made out of a couple of examples

I've played all sorts of Famicom SHMUPs, early and late ones, and the only one that felt like it was designed for auto-fire was Hector 87, which coincidentally was released at the same time as the first Famicom auto-fire controller and was advertised alongside it.
In that game, during the vertical segment, when you know what's coming, you have JUST enough time to get by killing half of the enemies WITH auto fire.
this also means that any Famicom SHMUP before Hector could not have been designed with autofire since it didn't exist

Using autofire when the developers did not intend can allow you to skip mechanics and phases of battles that would be far more odious without it. I’ve looked up videos for plenty of “high scores” by well known YouTubers that have runs that are simply not possible in the arcade because they used autofire.

I'm definitely not trying to go for world record scores, so for me it totally depends on the game. For Darius Gaiden, the default fire rate is more than enough to get you through the game if you know what you're doing, so for me I don't need Turbo to beat the game. That goes for a alot of run n gun games like Metal Slug. The game is totally beatable without autofire.

Touhou is harder than quite a few console oriented shooter series. Have you played the Aleste games?
Though for a bullet hell series, I guess not too many are easier than Touhou.
Try GG Aleste, it's a bit simple but you should be able to handle it as long as you've got the right weapon. It's fun!

It is pretty funny how many hardcore shmup masters there supposedly are on this board. It isn't hard to grab a screenshot if you've done it. For the record, I've never 1cc'd an arcade shooter in my life.
It took me a about year of playing a round or two daily. Anyone can do it. Just play the damn game.
I plan on giving one or two I really like a serious go in the near future.
It's very rewarding, I still remember the first time I got to the credits. Just pick a game you like and stick to it. I played some other games to mix it up sometimes but only occasionally. A round or two a day for a year is barely 200 hours total, totally doable. I'm not even very good at video games.
Yeah, I've 1cc home console shooters and touhou games before, and it feels great to win. I just haven't had the dedication to seriously try an arcade one yet. The difficulty increase is not insignificant. Will likely be something easy (though not just because easy, I love the graphics and aesthetic) like Batsugun.

The second game is worse in that regard if you watch some of the later cutscenes (some very weird dialog in there which is assuming why it never got a North American release). If they can get away with giant mermaid breasts in Shantae though then it should be fine

Use save states, multiple per level, learn every section and a good route through them, practice a lot, only play one game, until you've met every goal you wanted to and move onto the next, but don't do another game until you have at least 150 hours into the first one, of course find a game you really like first, if you can do all that then you can worry about scoring system strategies.

Also, practicing for an hour or two here and there is a lot easier if you turn the sound down some, and listen to your own music, or watch a movie or something, I suppose its like practicing a part on an instrument. You just have to put the work in. Console shmups make this easier too, with more options and difficulty levels, but no save states. Although some have good training modes. Also there is no shame in pausing and writing down notes. This can help expidite the whole routing thing.
Also, study into the game a bit, Battle Garegga will seem impossible if you don't read up on it first. Its like if From Soft made a 2d shmup. You are punished for everything.

Guardian Legend, if you count Zelda as an RPG. It was similar to Zelda but with shmup levels instead of dungeons.
Sigma Star Saga had shmup random encounters which were pretty bad. It was an ok game but not worth it from a shmup perspective.
