Because there is very little place for them to go, graphically. Graphics continue to improve, but diminishing returns on the improvement that more polygons get means that all of that hard work results in an image that isn't that meaningfully different than what we could already do.
That said, after graphics there ARE things that we can expect to improve technologically, but it may take some time. VR is still in its infancy, and won't be out of its infancy until we can get past the whole "it is literally strapping a phone screen to your face" thing. AI technology might result in something interesting, but that too is in its infancy, and won't be out of its infancy until we can combine AI generated content into traditional games in a meaningful way, outside of simple text adventures, but that will more or less require a system that is unreasonably powerful to really make use of.
