For example there is Grand tactician, but to move the troops in the battlefield is unnecessarily complexed, man of war is a good one, but only for multiplayer and maybe it is too modern for your taste, i don't know. Maybe modding napoleon and empire is the only solution to have a good game about muzzle rifle, napoleon3 seems a good mod, one of the best it is realistic unfortunally the campain map is stupid but that's not the modder's fault

Warhammer: Mark of Chaos/Shadow of the horned rat/Dark Omen for Warhammer Total Wars.
Many of them don't have campaign maps, or if they do they are very restricting, Imperial Glory and the King Arthur games are probably the closest ones of the bunch.
Out of these I have only played IG for more than an hour, which I love. The King's crusade's intro battles is such a slog that I have tried playing it three times, but stopped after 2-3 missions. The rest I haven't played.
Graviteam Tactics feels like a realistic WW2 Total War.
Field of Glory and its side-games are turn-based but have given me the same thrill that Total War battles used to give me when i was a kid.
Most wars don't end up in total war for both parties. Think the Gulf war for recent world history or refer to almost any colonial conflict. Total war is normally the outlier or alternative, not the normal.
All wars are total. Furthermore all countries are engaged in total war all the time. There is no such thing as peace. That's an illusion. Anyone who understands geopolitics knows this. I am smart. You are all dumb.

Oriental Empires is by ex TW devs and fully simulates being a moronic general who has no real control over what his unit commanders decide to do
