The main problem is that fat boy like to instantly go into his rolling attack with no wind up or warning beforehand. It looks like a bug thats not intended but it was never patched so I can only assume Miyazaki did it intentionally.
You can parry both of them or separate them with the pillars by locking the fat one in a roll, they are 110% fair and probably the best duo boss From has ever done. Demon's Souls enjoyers can even use sleep to not beat the game and waste 60 dollars too

Yes. Enemies don't react to night sorceries in general, though they might still react to getting hit sometimes. E.G. Malenia will dodge after the projectile hits her, which can sometimes make a follow-up projectile miss if you cast two in a row. On top of this, the staff of loss gives a very big damage bonus to night sorceries, so they're great as bread-and-butter magic spam.

Gonna be honest, at some point I just mentally checked out and used infinite Comet Azur to laser everything that wouldn't side hop it.
Commander Nail, Mogh, these guys, I just didn't care. None of the fights in this game even felt fun. You just stand around with your wiener in your hands while the enemy shows off before leaving you a window for like one or two attacks. May as well just skip the probably dog shit fights with laser cheese.

In my 130 hours of playtime to Elden Beast, the last fun boss fight I went through where I enjoyed myself in every way was probably Radahn, about 40 or 50 hours in.
Every boss after that was either bland and forgettable or rarely cool (Hoara Loux + Death Birds) but that was it.
I really liked hoara lou/god(wyn?) I forget his name, moronic naming conventions. but yeah top memorable bosses that are actually mechanically interesting is like >radahn >astel >dead dear >hoarah loux
and dead serious every other boss I fought is completely forgettable/unenjoyable. Only other bosses that spring to memory are bosses that seemed cool but are breezed through like frickin Othello the knower or whatever with his kamehameha and God(rick?) the Golden, stupid fricking naming convention. So youve got some 200 bosses and I liked about 5 of them

They aren't difficult anymore, they were at launch though but still doable obviously for people with an IQ 80+.
At launch they were even easier before mimic got nerfed, RoB got nerfed, and laserbeam sword too.

Literally all of dual boss fights (but the Demon prince) in this series are bad because of overlapping attacks and bosses hitting through each other.

Fight the solo versions of them beforehand. It helped me immensely to beat those frickers down a handful of tries later on.
