Stick with 1 since it's closer related. It's not as good as 2 but it is still fun and experimental. 3 builds on both but isn't quite as good as either imo.
3 is like a combination of 1 and 2 learning more on 1, so playing 3 last is the most logical thing here. I think generally 3 won't hit as hard without playing the others, especially the DLC which is like a love letter to the past games.

well besides the portability. I'd rather play it on the 3DS if gameplay isn't severely hindered.
The Switch version emulates just as easily and if you have no prior experience with the original's artstyle, there's nothing to miss. There are some new offerings as well that make gameplay more enjoyable.
Honestly, the only thing I'd need is a mod that lets you equip armor but keep whatever appearance you want like Remastered.
Game feels bad to play without being able to level down. Having to avoid quests so the game isn't a cakewalk is just annoying.

I played the game a year after the release of the remaster. I'm upset I took so long to play this.
This game is great but in comparison to Xenosaga and Xenogears its shit. Xenosaga III is still the best in the franchise and Xenoblade 2 absolutely fricking destoyed the franchise with its weebshit and now we’re in cancellation hell AGAIN.

Having played some of 2, I can definitely say it's easier to keep track of what's going on in the first game. 2 is pretty busy.

The games being so different from each other means you're always going to find people claiming their game is the best one.
This is honestly a good thing. The games are memorable enough in your mind and you will always have something in that game that you think it did better than the other ones. That's the good thing about Xenoblade, the next game can go full scifi like xenosaga or we can go to an adventure game again with huge forests.
It makes it easy to like all three for different reasons. I can't really pick my favorite.
As the Xenoblade to play for its "single-player video game" title? Sure. Great music, too.
But Xenoblade Chronicles X is reeeeeeeeally close on story (I liked Mira, guys) but it wins for basically everything else. Except music.
