Modern games practically are built around SSD's. Not having one to play games on leaves you at a disadvantage.

This is not news, it's been the case since SSD's became affordable. Not every game requires to be installed on an SSD to perform well though
Rift apart was pretty annoying with an hdd, moved it to the ssd because it needed to load like 2 seconds everytime you went through a rift during those grindrail segments

As a computer illiterate, what does an ssd actually do? How does it help with games?

It's enormously faster than a mechanical hard drive. Load times and general OS responsiveness are the main benefits. The latter I can't stress enough, especially if you're using Windows.
HDD is generally going to transfer data at about 100Mb/s, an SSD closer to 500Mb/s, which means your graphics card can get the assets it needs quicker and reduce loading times and stuttering, however to recommend an SSD is 2023 is fricking moronic because m2 NVME drive transfer speeds are 3500Mb/s to 5600Mb/s and comparable in cost to SSDs.

It depends, it will probably be a lot more noticeable when directstorage is widely implemented. For a lot of games released in the last 5 years it definitely makes a difference.
Having just upgraded from a SATA SSD to an NVME one, I'd say there's definitely diminishing returns. It's not and can't be the huge jump that going from an HDD to any SSD is.

The most notable change is that the OS starts a few seconds faster, in vidya the difference is usually just 1-2 seconds compared to SATA SSDs.

Hard drives have to move their mechanical read/write heads to where tracks of data have been written. There's going to be some lead-in and lead out as the device makes sure it got all of the data, and if you have a lot of little bits of data written all over the place, as would be fairly typical of games -although it varies- then performance can frick right off.
SSDs, for lack of any more technical description, just grab the data you need, regardless of where it is, whether it is fragmented, or not. The memory modules simply have a certain degree of performance, and it can read/write according to those metrics on demand. No seek time; it just starts reading.

I haven't played a game on an HDD since I bought my 256gb WAAAY back. I just buy more SSDs when I run out of space I have 4tb of SSD now.
