Huh. Am I underestimating how much a 1000 enemies are in a JRPG or does no one kill enemies because the moronic level scaling?
nobody kills enemies because you can get enc-none extremely early in the game

XP to level is always 1000, so you can level every encounter on the Island Closest to Hell.
Lots of useful drawpoints there.
It's like a 3-4 hour grind at 3X speed in one particular forest that'll consisting give you a 3 enemy encounter.
RPG "achievements" are awful.
I could boot up an old save on my PS2 or ps3 and see how many encounters my battle meter recorded at the end. I'm confident it would be under 1000.
I've got a save file at 40hrs that shows 300 encounters.
At the very least that's including the Tonberry King G.F. that required 20-ish consecutive tonberry kills to get, which was B.S.
Playing the HD remaster at 3x Speed, I couldn't believe I ever did it before.
I love the game, but the input lag in the menu is horrendous compared to the original PC or PSX versions. I've beaten FF8 a couple hundred times, but the lag is making it a chore in the remaster.
Why can't anyone do remasters right?

Griever is explicitly junctioned from Squall's mind, which is the strongest GF, again, in his mind. The argument that only Rinoa and Squall about Griever is irrelevant because no one else also knows Edea having Alexander in her mind because when you try to draw from her, its name is always known. Tldr gameplay mechanic integrated to the plot.
Ultimecia not knowing Squall because of amnesia is too convenient of a reason because nothing in the game implies this (to be fair, nothing denies it either).
The strongest hint on who Ultimecia is one of her starting dialogue which roughly "So you'te the legendary SeeD destined to face me?". Ultimecia came from the future. From this we can infer that somehow Ultimecia was born as or going to become Sorceress, and there's a prophecy (and/or historic record based on our exploit against Edea and Adel) that SeeD is going to fight Ultimecia. People persecuted her for it ("Return to me my childhood" or somethint along that line), and in her rage she becomes Ultimecia. Ironically it sets in stone her destiny because later she transfers her power to Edea, Edea raises Squall and co to fight her, the history/prophecy is written, and the time loop is made.
Ultimecia making as if the orphanage is an important place for her is precisely because it's important to Edea (and by extension the heroes) and she knows it from her time inside Edea.

I'm on the last stretch of my FF9 playthrough, I did everything and grinded to lvl 99, was fun as breasts. I'm thinking about doing FF8 next since I don't remember much about the game, is it true that if you grind to max level the game becomes impossible to beat?
Its not impossible or even that hard but you get your powerups from spells so you need to keep pace with it I think

I tried, I got the re-release on PC and it's a complete and utter pile of shit, it's so fricking lazy that I want to strangle Square Enix as a physical entity.
The biggest issue is the menu speed. Everything else can be modded like the original release, or not at all like the PSX version.
