I don't know what games are actually in the collection, but assuming it's got these you'll be in for a good time. If you can, use a dpad and not a joystick (but I feel like that should be common sense)
You're spot on, the Anniversary Collection is exactly those games. The Advance one has the three GBA games (duh) and Dracula X. What's your take on those games?

I'm pretty pissed the Rondo + Symphony of the Night one is PS only because they lazily used Playstation's own emulator
The SoTN on there is some god forsaken shit with a new script and voice overs. It's worth it for the Rondo port but I'll never touch the SoTN on there.
Huh… I played SotN for the first time on my PSP in 2008 and I thought it was fine
It's a not terrible or anything but the original vo was classic and the script wasn't even bad. It was lampooned forever as if it were a goofy basement dub.
It's precisely because it's goofy that it can't be rereleased. The PSN emulation was Japan only for the same reason, it's a Jeremy Blaustein full of legal problems related to all sorts of trademarks that weren't used in the JP version but were in his.

the reason why the PS4/PS5 release is the new is because they're using rondo of blood remake as base and they didn't have a PS1 emulator for PS4 then so it made sense using their existing PSP emulator that they used for Parappa

Symphony is available standalone on Xbox as well, the rather nice 360 port is backwards compatible. Of course it's a separate purchase...

Dracula X is alright I guess. It just feels inferior to Rondo but since you haven't played that one you may like Dracula X. It still feels inferior to similar Castlevanias like Bloodlines or 4 but it's ok.
I'm more partial to the "Metroidvanias" on the GBA than the lumbering precise platforming of the original Castlevania games.
The GBA games are just rad casual fun, killing monsters, jumping around, leveling up. Not sure about the experience of playing them on a Switch tho
the castlevania series is all over the place. I like them all... except 2. the GBA games are metroid vanias. aria of sorrow is awesome I'd say start with that if you like metroidvanias. if you finish the GBA games and want more go back and play symphony of the night for sure. its on android, but not switch for some reason.
my favorites of the ogs are 1 and 3. they're just great platformers with awesome music. I know people love 4 but I haven't played too much of it.
For the third game, play the Japanese version (included in this collection) for a more balanced difficulty.

Dracula X is pure shit. Turn it on and listen to the first stage's theme and then go play a different Castlevania. It's the worst.
If you want to play the original Gameboy games don't bother with the first one. The music is great but the gameplay is extremely slow and bullshit. The second one is way better and one of the better games on the system.
I played through these last year (most for the first time). Here’s a rundown:
>Aria of Sorrow
- my favorite Castlevania and a great place to start if you’re new to the series
>Dracula X
- First CV game I finished, a lot of fun but most people aren’t fond of this port. I think it’s potentially a good starting gane for the “traditional” style CV because it’s way easier and pretty short overall
>Super Castlevania 4 and Bloodlines
- really high quality games, my favorites of the traditional platformers. CV 4 can get pretty tough though
>Circle of the Moon and Harmony of Dissonance
- Fun games in the “Metroidvania” style. Not as Good as Aria of Sorrow, but will give you more of that style if you want it
>Castlevania 1 & Castlevania 3
- Great games, but really freaking hard. For many people this is the “true” Castlevania but I wouldn’t start here unless you’re really used to NES games and their difficulty
>The Adventure and Belmonts Revenge
- Short, easy, and sweet. You can blast through these in a 1-2 hours, its a fun ride
>Castlevania 2: Simon’s Quest
- Innovative, ballsy, but incredibly frustrating game that ultimately comes up short. Impossible to complete without a walkthrough/guide. Painfully cryptic
>Kid Dracula
- just sucks

If anyone's curious about the collections themselves, they are pretty pedestrian "rom museums". The bonuses and package itself is impressive. You can toggle the NA or JP version of the games, as well as seeing some magneto design docs (let's be honest, you'll probably skim through that only once). Save states for each game. I would have liked more auxiliary stupid shit (like the challenges in the MM collection, or mirror mode from the Genesis collection) but I like dumb stuff

I honestly don't remember how they treated Simon's Quest, sorry. As far as "mix and match" of JP and NA version's content, it's not possible.
Why wouldn't they? You can actually see them in the background of Bloodlines, it's an easter egg.
