I would have loved it to be like Zootopia with its well separated biomes and with the Pokemon species behaving like a parody of the different communities of NY, yes they are already a graphic parody, but it would have been funny to arrive in an urban area and find a group of Scrafty playing with an orange pumpkin, a group of Maractus celebrating a noisy party in the desert area, Beartic taking shared baths in a kind of frozen springs, or Braviary nesting on the top of large buildings and being considered good luck.

Actually Iberian Spain has the only 2 deserts in Europe, MoBlacks and Tabernas, both are icons in cinema settings and that's why you get plenty of Pokéstar Studios pokemaniacs in Paldea a side from the now obvious hint of Unova being it's Kanto to Johto to some degree.

I do know this desert, I actually have been there twice, moron. And it looks nothing like the desert they put in the game. It's not a sandy desert.
Because they need to stick ground Pokémon somewhere contextual. This is why there's that awkward ice cave in Hoenn, a tropical region, for example.
Every region needs to have a forest, a desert, a mountain, a snowy bit, and so on, even if it doesn't make any sense, because you need to stick those mons somewhere.

Galar doesn't feel at all like GB. Everything about GB from its geography to its history and mythos was underutilized or outright tossed out. Possibly the worst representation of its real world counterpart besides Unova. Unova feels nothing like the US. They gated everything into the north eastern side with NY as its centerpiece instead of building a region out of the extensive geographical diversity in the US.

I guess OP is bothered because Unova doesn't fit neatly into the categorization of Japan regions vs. non-Japan regions. That is, it's like the Japan regions in that it doesn't try to capture the culture of the place it's based on, but it's like the non-Japan regions in that it's... well, not based on Japan.
Only reason they didn't do it is because of graphical limitations and their autistic need to faithfully keep it for 3D remakes. It even affects the anime past the first season.

It was the first time they did a region outside Japan, so it still feels pretty Japanese.
To be honest I much prefer it that way and I wish the other regions were the same. You can feel the Japanese influence slowly creeping back in with the last two games. I think/hope they will return there in gen 10.

Kalos feels like an idealized japanese version of France, almost nothing to do with the real thing.
But here's the thing Unova doesn't feel like an idealized or parody version of NY, much less realistic, Unova totally feels like a JRPG fantasy world.
I would have even preferred the way they portray American cities full of violence in retro games, it was unrealistic but had its charm.

Unova is different because it's the first time Pokemon game set outside of Japan.
I thought it felt a lot like the US in some spirit. It’s primarily urbanized and industrial, huge metal bridges and modern cities. Every Gym is a place of work, and a few areas are just construction sites for more expansion (Route 4, Twist Cave). There are less big naturescapes than Gen 1-4, but there are some gated parks and wildlife preserves. Unova Pokémon League building looks vaguely similar to a US government building from the outside. More people from different ethnic groups live here than in past games also. And there’s that boat ride that tours you around the main city, even.
None of the games need to be 1:1 with real life tbh, but inspirations can still be evident.
