I had thought of going down the 7000 route, but it was a lot more expensive. I ended up buying a prebuilt (where it listed the parts they use) with a 5600x and a 3060Ti for like £900 bongbucks. The whole 'will go to 95c' thing put me off badly off of 7000.

Sure. Not necessary at all if you're still happy with what you've got, but you can plop in a 5700X for less than $200 and that alone will let your 1070 really stretch its legs, plus you'll probably be able to tune your existing RAM up since the 5000 series memory controller is way better than the 1000 series so that'll get you even more performance, and then that CPU will keep up with your next GPU upgrade. Or you can do the 5800X3D for about $100 more, which has been holding its own against the newest Ryzen and Intel parts and will still be a top-tier gaming CPU for a good long while.
