Yeah the finale was a bit underwhelming. Bryce’s motives were whatever and a downgrade from the supposed fire-bending immortal prophet that the game was making him out to be. And the final gauntlet for Ebina was just a recycled millennium tower. I thought there would be more to the finale with unraveling the plot but it was just wrapping up the final bosses. They never showed what happened to the yakuza who were sent to Nele Island and it isn’t shown why the Daidoji wanted Akane. The story just fizzled out and I think I’d prefer the moronic but amusing story of Y4 over this

Because the back half was centered around Kiryu, the man who erased his name and had like two or three conclusions to his story, as he...has yet another finale character arc. and the arc is all about how he has to rely on other people for once I guess we're ignoring Yakuza 4 & 5 and also trying to make up for the many sins he committed by running away from responsibilities in the gangster life. Also, Wong Tou's kid is being held in this random shed - see, we didn't forget!
There was obviously some kind of major rewrite; I think Lani and Akane were supposed to have a lot more screentime than they ended up getting especially at the end, good lord
So, based on my experience (Haven't touched Big Swell yet but have beaten both the HH and YU) Seonhee is objectively best to be in Housekeeper while Chitose is objectively best to be in Geodancer. There's no real purpose to put Saeko into play at any point as both of those girls have absurd AGI and can both throw out Substitution Jutsus or Bubble Bales with Scum Scrapers and Money Suckers when they need to. Saeko effectively offers nothing to any team that they can't cover in PA, and she's basically only useful in Kiryu's part as "The second girl to do throwaway stuff when Seonhee doesn't wipe out everything in one Bubble bale".
In terms of final job loadouts this feels like the best one: >Ichiban
Aquanaut. There's no reason to be in any other job. Negating all resistances + Essence of Friendship is an instant 3500+ attack and as long as you keep full health Essence of Showboating/Surf Twister does like 1600 easily. >Kiryu
Desperado. DoD falls off extremely hard and Desperado can crit with basically every attack which means crit Burning Arrows and crit Wild Sweep which is absurd. >Eric & Nanba
Host. Outfit gives them resistance to every damage type, it has absurdly high MAG as a job, and with Desperado's Poisoned Cloudburst you cover every single magical type. >Chitose
Geodancer. Its ultimate weapon is fantastic and the armor is a straight damage buff that's really easy to keep. Paired with the enormous MAG it's too good to quit, and Chitose has high AGI. >Adachi
Linebacker. He's bench fodder anyway but hit terrible AGI allows "Hut! Hut! Hike!" to never drop its DEF buff and you gain free damage buffs for Essence of Showboating. >Seonhee
Housekeeper. The ultimate weapon is absurd especially if you make magic crit, the armor is pretty good, she has amazing AGI, and you have so much versatility. >Saeko
Probably Barmaid if you had to but she has tough competition. >Zhao

based on my experience any job is fine and works well it's all about levels and 6-7 star weapons. Big Swell is pretty easy if you start with 50+ level. I only died on last level cuz I forgot Kasuga got cursed so we got one tapped. Outsied of that Dondoko laser, Kiryus dragon spell will carry you through any boss/big group no probs there
I beat the whole game with Ichiban on freelancer and it wasn't even that bad. It's too easy to worry about minmaxking honestly, except for the dlc thing.
Oh I know it's not that bad, I'm just talking about from a minmax perspective. Anyone can use any job, but there's so many that excel with specific things while others just suck absolute ass like anyone in Samurai or Breaker.

Saeko > tennis player (def bikini)
Kunoichi isn't worth it. You need 3 AGI stacks to deal any meaningful damage with Shadow Clone Jutsu while Housekeeper and Geodancer using any Housekeeper magic will outdamage it instantly even if they aren't going as many turns, not to mention the setup for those stacks and not all fights have multiple enemies to kill to get them. Many enemies have more weaknesses to magic than knife attacks as well, and its ultimate weapon and armor are just so-so. It's a DEX build and only that. It's basically this game's Musician except instead of Voltage you have Agility buffs and it's not as useless as Musician.
Night Queen is okay but again, it has the issue of focusing on ATK-leaning attacks when the women are amazing at MAG-leaning attacks since all three of them lean towards both sides so you may as well make them mages. They also have some amazing magical attacks whereas their physical stuff is so-so unless they're Tennis Aces. Tennis Ace using Night Queen stuff isn't too bad I guess.
the best part about big swell is side stories after you beat each level. They're really good and it's nice to see devs tried to canonize premium adventure stuff with those
no, you can play it right after you beat the game in premium adventure. Also it's the best thing to do before bg+ anyway - should be a cake walk with top gear and 70+ characters

That said, Ebina was shit for 99% of the game, then he was actually a pretty good antagonist for that fight and discussions before/after. The fact that he realized Bryce's plan wouldn't work, and his own plan would hardly work either make him pretty compelling, and does lend credence to what would usually be resolved as "but he's a good boy who dindu noffin".
