On a serious note, seeing excerpts from this interview made me lose all faith in future Aonuma Zeldas.
The open-world formula itself isn't the problem, the problem is that everything else isn't even half baked. Imagine how cool a Zelda game with BOTW's overworld + 9 OOT/MM style dungeons and lots of [good] side quests around the world could be. Combine that with a decent story that isn't "thing happened in the past, find cutscenes around the map to see the story" and you have a formula for potential ludo.
I cut BOTW slack, it was their first huge game and it was obvious that the world sucked up most of their dev time. But then TOTK came along, taking 6 + 7 years to make, reused the BOTW map, and didn't improve on any of BOTW's weak points.
This, you have have an open world game and still have solid side content in it as well as restrictive main dungeon that test you to the limits and don't just let you fly over everything with 2 fans.
People saw it coming from a mile away and were sounding the alarms. Nobody listened. What's worse is the game still got sucked off and sold a gorillion copies while fanboys screech over criticism and handwave it all away. It's too late now, Zelda is on the Pokemon path.

Fire Emblem Engage sold worse than Three Houses. Xenoblade 3 sold worse than 2. Even Mario Wonder, a massive step up from NSMBU is selling less than NSMBU Deluxe did. Many people are more casual gamers and see a second Mario or Zelda on their console and say "well, I already have a Mario, why do I need another?" This happens every single generation. Galaxy 2 vs Galaxe 1, Majora's Mask vs OoT, etc. I could come up with a hundred examples. It's part of why Nintendo really needs to launch another console next year.

About a year ago elden ring's sales was around 20 million so I don't see how it's wrong.
Elden Ring sold 13.4 million copies worldwide by the end of March 2022, and 20 million by February 2023.

TotK sales didn't really drop off as hard as it looks, because Nintendo themselves stated they overshipped the game on launch. It just took a few months to sell all that stock, but I'd expect a sizable bump after the holidays with all the initial stock gone and holiday sales. I'm also expecting BotW and TotK to get visual enhancements on the switch 2 to keep them selling for a few more years.

I feel like we browse different boards. When I go into the catalogue and see a Zelda thread, 9/10 times it's a thread where people are shitting on the direction of modern Zelda, and most posts in those threads agree with that sentiment. I suppose you're right that there exist some schizophrenic defenders of modern Zelda do exist, but it also seems pretty evident that there's only a handful of them at best (as evidenced by their clear samegayging) and after a while I find the mass-replying antics of those sorts of posters tiresome rather than entertaining.
It's interesting isn't it? I fully recognize that the series is pretty mediocre all in all, yet I care a lot for some reason. The few games I really liked in my childhood make me want to see this series be everything I think it could and should be and when they keep torturing it like this it hurts.

Aonuma holds a grudge. You know why they scrapped Link's classic look and switched him to the blue shirt? Pure spite from Aonuma. His first big Zelda game (Windwaker) had that shirt and was widely mocked for its art style by fans of classic zelda. When he forced it on the series a decade later it was purely to spite Zelda fans.
God knows what the frick he's gonna do after this. He seems to be blaming people wanting a return to the "classic Zelda formula" for not winning any awards.
