Not that guy but the actual reason I imagine is because "the chase" is always the part of romance stories that audiences tend to resonate with the most. It's why there's so many romantic movies, books, comics, etc. that focus on how John and Jane got together but not so much about what John and Jane did while they were dating/married.
It's used as bait to keep stringing people along if anything. For instance, everyone and their grandma is aware that Mario and Peach are pushed as being a couple but Nintendo won't ever come out and say it officially because they can keep using "Will THIS be the game where Mario and Peach become OFFICIAL?" like they did with Super Mario Odyssey. It's for marketing more than actual story telling, because if they were to officially become a couple, they lose on selling that "chase" element.
I get the chase is an important part of it, but a chase that leads nowhere is just a waste of time. The conclusion to the chase is just as important as the chase itself. Also unlike with Mario, most of the Zelda games are soft reboots (or distant sequels/prequels if you go by the timelines) of the setting with a new Link and new Zelda every time, so setting them up as a couple in one game has little impact on others, it's why we could have another girl completely sideline the princess in TP.
At the end of the day it's just Nintendo being Nintendo (aka morons) for the sake of it. What gets me is how many people are perfectly ok with biting the same bait over and over.

I feel bad for the poor bastards that genuinely believe Nintendo still cares about "dah tamlahne" and will write twenty-page essays about how BOTW/TOTK take place in the Skyward sword timeline or whatever because there's an easter-egg sword you can get or because Zelda vaguely says something about a hero from the sky in a cutscene in BOTW.
I guess I don't have room to talk because I actually liked BOTW's story for what it was, but the only Zelda games I've ever played are BOTW and TOTK. I actively dropped TOTK due in part because of the story. I got fed up with the temple cutscenes being the same, the glyphs being in moronic locations often with late-stage memories next to early ones, the terrible plot in the memories (it feels both too short and too long somehow), and how no one important (but Impa) acknowledges that Zelda is a dragon and that there's a fake Zelda. Looking back it feels like I wasn't supposed to interact with the glyphs until after the Hyrule Castle fight.

BOTW's story wasn't amazing, but it was clear it was built for being found out of order, with the only big memory being the absolute last one you unlock. It's why they have the King and Impa explain the beginning and end of the story to you. Nearly all of BOTW's memories are adding additional characterization to Zelda, the Champions, and Link's relations with them.
TOTK tries to tell a mystery story with dramatic scenes that can be viewed in any order, potentially spoiling major plot elements. It doesn't help that none of the characters are interesting. They either come across as completely moronic (Zelda/Rauru) or are there for such a short amount of time that they basically have no characterization outside of one trait. Mineru (Smart) Sonia (Kind) Ganondorf(Evil).
I had a moment of "what the frick am I even playing this for" when I realized I hated the plot, I disliked building, I was frustrated with the ingame (non-cinematic) story, I hated the sage abilities, I was annoyed with how little Hyrule changed, I was disappointed that we learned basically nothing about the Zonai, I was bored with the empty Depths and copy and pasted Sky Islands, and fighting almost the exact same enemies. To the point I stopped playing right before the Ganondorf fight beneath the castle because I was just bored and couldn't be arsed.
Perhaps I'll come back in a few months or years and just go in expecting BOTW but with random shit littered around and with an okay building mechanic slapped onto it. Probably just coping, but I feel like their original plan of it just being a DLC probably would have worked better because TOTK feels super fricking padded. Was it really worth 6+ years of development just to have BOTW again in a different physics engine where you can slap 15 wheels onto a concrete slab and have it still control decently well while the switch melts in the dock?
