Snake Eyes actually have various ways to play around Super poly including the Knightmare Phoenix plays. One of them even involves not having Baronne or Borreload onfield at the same time, and not having multiple same atrributes on the field until it is too late for the opponent.
The only way to stop snake eyes is by not allowing them to play.
IP + amblowhale (board every snake-eyes makes) is a superpoly target
That YCS video don't even bother with Amblowhale (a lot of comp players are cutting it), it doesn't even bother to go with link 4 fire monster as endboard.
The superpoly resistent board is basically a layered synchro board that changes boardstate during opponent's turn.

My girlfriend got me into this 2 weeks ago, I built Toons and Wind-Ups because I like the monsters. Now that I have a general grasp of how this game works I'm torn between hating myself for going all in on these low tier decks, and also wanting to commit ultra hard and beat the shit out of all these fricking Snake Eyes and HERO decks I can't stop fighting in ranked. Are there any shitdeck/petdeck grinders around?

Some toon cards can be used for a more old school Exodia deck with magical library, which is still stronger and more consistent than any toon deck you can build. So it's not a total waste.

I never doubted it'd be possible to climb to w/e if you got that box checked. Even Ra without Numeron shit could climb to Master if you resolve Maxx C and draw enough board breakers to OTK them on your turn.

Wind-Ups are unironically a very good deck right now, at the very worst they're high rogue tier but I think if enough people tried to optimize them they could be a solid tier 3. They make can do huge combo plays and extend through at least 1 hand trap with most hands, and they don't give a frick about Droll which is great right now. They lose to Maxx C but you can droll yourself to play around it. You can easily hit Master 1 with them if you know what you're doing.

Yeah, it's really fun when my Zenmaity special summon gets Ash'd but then I simply bring in Zenmaintenence, put Shark in the hand, refresh Rat, grab Magician from the GY and just resume the combo.
My main issues come from just not knowing a lot of decks and their chokepoints, and what to end on when I finish my turn when I go first. I default to F0 Utopic Ray and Gossip Shadow for two negates but that hardly feels like enough for all the combo decks I see, which bully through anything I do...
Two interactions really is very few in this day and age, I don't know what wind-ups do but try looking up some decklists and or videos (the more recent the better) to maybe get some ideas
2 interactions would be 'fine' if your deck also runs 15 handtraps however but I don't know if wind-ups can do that
Wind-Ups don't have any good in-archetype bosses or gameplan at all really unfortunately, but they're very good at spamming materials without any restrictions so you can make a lot of generic plays with them. The combo is pretty long and probably pretty complicated if you're not familiar with all the mechanics, and some people don't like boards that end on nothing but generics which is all Wind Ups do, so I probably wouldn't recommend them if you're new to the game.

They can play through 1 hand trap(except Maxx C) with most hands and it's not uncommon to be able to play through 2, the real issue with Wind-Ups is that you have to go second half the time
You can play through more than you'd think because no one knows what the frick windups do and many of their effects aren't hard once per turn. It's a case of an old archetype not made with links in mind.

Swordsoul cards themselves are boring and braindead to play. The Tenyi cards, especially when you try to break boards with them, are fun.
Mo Ye + Longyuan and Chixiao + Baronne are boring. The rest of the deck is actually quite fun.
Mo Ye is the most overrated card in the swordsoul deck. Its ceiling is vastly vastly lower than Taia. You pretty much hope to not see Mo Ye in your hand when going second.

Every deck suddenly has lava golems and other board breakers since they become completely mandatory to go second. Going first decks aim to FTK or turn skip with no chance of being disrupted.
