It's not entirely impossible, the kiosks likely use hardware that is orders of magnitude more powerful than what Doom was designed for, and since it's open source it can be compiled for architectures other than x86. It's really not that impressive anymore, it'd be more impressive if they got Crysis running on it instead.
They're PCs running windows embedded, they can run doom natively.

Are you talking about the borders on either side of the gameplay screen looking unnatural? Doom runs with those borders when the aspect ratio wouldnt fill the screen

Mario 64 is also getting a lot of ports these days.
Prince of Persia also has a very long list of official ports
Doom and Mario 64 are AWESOME ports because the source is ingenious enough a CS student can understand on his own.
Modern games are too bloated, too high level, too library and generic engine dependent, no single person can understand everything.
If we're only counting official ports, Myst, James Pond 2 and Rayman 2 could give it competition

Not officially. SNES, 32X, Saturn, PS1 with final doom and Ultimate Doom, Doom 64 (New game), Jaguar, 3DO, GBA, XBOX, XBLA, PSN, IOS, Android. I could mention more modern systems, but at some point, all Doom ports became derivative of sound code ports. Officially, It was ported to a lot of systems. John Carmack GPL'ing the sourcecode allows it to be ported to anything by anyone.
