Many things, but for one, Link shows way more character in the JP version, the Quest Log being the most noticeable since it's actually written in 1st person on the JP version, but there are many other instances.
For example, here the JP version says "For my (future) lover". I find it strange that they would alter this line as it gives a little more depth to Link's character. From that one line, the player can infer that: a. Link is single b. He is hopeful to find love in the future, and c. He lies to people about having a lover. Meanwhile, the Localization tells nothing about Link.

It's mostly just subpar. NoA usually gets the basic fundamental intent of most text across to the reader, but they like fucking with a lot of characters' tone of voice which ends up losing a lot of finer details in the process. The way modern NoA localizations are written really reek of a juvenile understanding of the Japanese language, and injecting memes and altering proper nouns muddies it even further.
