I honestly don't understand it, even a moron can understand that those sites are an echo chamber where you're not even allowed to think differently.
Dev here, the only place I listen to are my internal community and even then I never listen to people audibly, only through anonymous polls. I remember one time I had a bunch of people complaining about a feature, did a poll and found like 80% of people liked the feature, 10% were indifferent and 10% dislike it. I could only wish other devs would have the foresight to just do anonymous surveys to steer direction for their game. The secret ballot always wins.

Recommended Specs for games is about 3x as high as it probably should be if it was even remotely optimized.

I think the truth of the matter is that there are so many different configurations of end user machines now, that you have basically no hope as an indie to optimize well for everyone.
The same excuse can't be used by big developers because they have the money and manpower to do it, but don't, because they're fricking lazy and don't want to spend the shareholders money unless its to settle yet another scandalous lawsuit.
As long as you don't majorly frick up the tris count of your in-game models, as a one-man dev team you're unlikely to actually create a game that would need optimization. And don't make some weird spaghetti code that does thousands of unnecessary loops for every action.
Depends on what you're making the game in.
If it's an established engine, then that's the bottleneck.
If you're doing it from scratch, then it boils down to selecting the least heavy algorithms.
