Mario 64 was/is the pinnacle of 3d mario but Galaxy's gravity gimmicks were nice and fresh - especially when compared to the trash water gun gimmick of Sunshine. Sunshine was very mid and the first mario game i didnt even bother to finish as a young person when it came out - after having played every other mario game. sunshine was too generic/coasting off 64's formula. versus galaxy that gave us the more modern 3d mario aesthetic and didnt 'go to far' like odyssey(going into the real world = yikes)
Galaxy 1 and 2 were the last 2 good 3d mario games. everything since has been slop.
Super Mario Galaxy 1 is the worst 3D Mario, yes, Sunshine is better, 3D Land and World are better even, Bowser's Fury is better as well. As time moves on it went from being a wonderful game to being a clunky limiting mess.

Weird cause I felt that game was the beginning of the end for soulful Nintendo games. I was never quite able to put my finger on it, but it's probably the orchestral soundtrack. It feels like any time modern games use it's a cop-out to avoid producing any actually relevant music; just stick a CINEMATIC soundtrack on something and call it a day. There's something to be said about working within limitations. That's just my opinion though, I dunno.
I think for me it's the colors and the controls. It feels shockingly different from modern games. Not quite retro, it does feel modern, but different. Soulful. Ludo.
