The gameplay was developed to appeal to ten-year-olds in 1996 and hasn't changed much since then.
HGSS are the best for having chockfull of content. Frankly Pokémon is impossible to get into at an older age. There's decent depth to the game but it's only accessible if you know the Pokemon and the mechanics by heart.

Gen 4 games are universally sluggish as shit. If you didn't grow up with Pokemon you might not get the appeal anyway but try the gen 2, gen 3 or gen 5 games. Gen 2 games play way better than HGSS aside from QoL changes only pokemon autists will care about.
