Its just not a good video game, I didnt like it as a kid even before i learned why sometimes enemies just randomly instant gibbed me and could tank multiple desert eagle headshots and I don’t like it now that i do know why

You've been dropped on the head as a kid, there's no adaptive difficulty, you just don't hit them properly because the shots are slightly random. Different enemies have different HP values and a few of them are mini bosses like Dime on the ship or Rico at the Bar and have massive HP.
