elden ring has different bosses and different playstyles. trying to parry morgott is very different than just r1 spam. trying to parry and r1 spam in between is very different. so is doing all that and adding on R2s, WA, jumps, there is so much room for improvement on your playstyle that you can be constantly learning and struggling even after 100s of hours.
I disagree. I think having a few bread-and-butter games you can fall back on that you have thousands of hours in can be comfortable and relaxing. It can improve your mental health the same way trying new and unique challenges can.

It's a self-reinforcing cycle: your brain is losing its ability to adapt, which means you're losing the ability to get outside of your comfort zone, which means you no longer encounter challenges that could counteract the trend.

Putting in 1000+ hours into a single shmup to slightly beat your own high score every now and then is pure kino.
You won't just lose the ability to change, the plasticity remains, and the more you engage in demanding mental activities, the easier it will become for you to adapt further.
The issue is that we live in a very limited world in all fields and you basically wind up being capable of learning new skills quicker and quicker and the magic of learning anything at all is lost because even new challenges become, in essence, less new.
I don't disagree with you, but by the time you're 30, fiction in general, whether games or film or novels, all of it will cease to be challenging enough to you for it to truly count.

Some people prefer to do one thing well rather than a hundred things poorly. A lot of my friends are like you. I jump from one game to the next with them, never spending enough time on any one to fully appreciate the game. I prefer to be good at one thing rather than be bad at a hundred things, in life and in video games.
I just jump between games to find the right one that I would replay later on.
It also helps identify what type of game I actually enjoy instead of “I enjoy this game because it’s the only thing I can play” mentality. I.E Skyrim
