MMO junkies (especially old-school ones) usually don't have any IRL friends interested in their nonsensical niche interests. Most of them are just happy to easily find like-minded boomers and discuss old stuff together, so they don't mind if the game takes five decades to come out since they are already getting the "old-school MMO experience" they actually want from the community around the project.
I think the art style change was a smart move to be honest. Pretty much every commentator, news outlet and forums were clowning on the game for taking so long and looking lack luster. While the old style gave it a dark fantasy look, it didn't look that great and by the time the game releases (if ever) it would be considered visually abhorrent.

So the devs finally realized that they can't make the game fast enough for their graphics to not be hopelessly outdated by the time it comes out so they went with stylized visuals like WoW. An MMORPG takes a good team with a solid leadership and decent funding about 5 years in full production to come out, remove any of those aspects and you easily double the development time.
