Museum Heist but you're the guy in the van outside doing it all with various POV drones and cameras. Pre-plan instructions, coordinate with yourself, use gadgets.
Rainbow Six before they made it lame had a ton of fun stealth missions where you did just that. Coordinated the run through the building without being seen.
As a fellow Rainbox Six enthusiast, stealth missions are NOT fun. They are an anxiety-inducing nightmare.
As for the stealth game mode you can play through maps, it was a mode that was just thrown in last minute with no real consideration about it, as it hardly even works on some maps simply due to the nature of their design.
I will say, at least it included stealth though.

I feel like there’s not a lot of stealth games about escaping something, like a prison or something. Like only some fps’ have done missions about it but not a whole game. Seems to mostly be infiltration stuff.
There's a bunch of levels in Splinter Cell games where you infiltrate prisons.
But do you escape them?
The one in Double Agent you do at least.

however what they don't know is you have proxy bodies, and one of them is active
your goal is to reestablish control over the ship's systems and by extension, your other bodies but you have to make sure they don't know it's a robot doing all the killing because once they find out they'll start working on wiping you out for good
so you'll have to make sure the enemies can't radio in reinforcements by rushing them before they can pull out the radio so they're too busy shooting you, use voice mimicry to convince them that nothing is wrong if you were too loud, and really have to hide bodies that were killed using your unnatural robot strength instead of just strangling them because not many people can just punch someone's jaw off
and if you take over a certain section of the ship you can just frick with enemies by closing and locking doors they're using to run away or disabling certain safety features so doors don't automatically reopen if they get obstructed while closing or just plain turning out the lights
Why has no one made like a stealth heist sim where you have a team of guys infiltrating a military base or something with one dude in the van helping with mapping and spotting patrols and shit?

Is there any stealth game about kidnapping people? I think this basic gameplay aspect could be used for various different thematics.
A fantasy, shortstack, sweaty and well endowed goblin thief that does general stealin. You need to manage your visibility and smell to not get got. You're on a global time limit because a few months back you've got got and got pregnant now.
Sprawling levels like in first two thief games. Story is inconsequential.

Something like Monaco or Party Hard. Where you can go around and cause chaos, but be free to play in a slow stealth way also. Then if you get caught, you're not screwed into restarting, through some sort of hiding/escaping mechanic.

Stealth mission with procedural level design so you can't just memorize the best routes and breeze through it on repeat playthroughs. I hate proceduralslop myself but stealth games seem like the situation where it would solve the issue of lacking replayability since half of stealth gameplay is just finding a sneaking route.
