The best version is Java Edition with your mods of preference. If you've never played then just download bedrock edition and try out the game, save yourself the time of configuring bullshit.
Vanilla performance has gone to shit since then. You could use optifine but I don't really feel the content added past that version to compelling. Also, >drowned >structures everywhere >pillagers >>

Structures are sadly too frequent, but you can mod it.
Pillagers are fine. Villagers less so honestly.
Phantoms are bad, but overhated. You either changed your playstyle to mitigate them, or you disabled them in the gamerules. A minor annoyance to the end.
