Download a bunch of roms and isos for older consoles and emulate all you can until you find something you like, finish it, and then repeat.
Try out different genres, even if you think you dislike them. There are games like Hades for example which drew in even those who really dislikes roguelites, because it's an insanely high-quality game.
Otherwise just start emulating older hardware. For example, grab a PS1 or PS2 emulator and start going through some IGN "le top 100 games of [console]" list. You'll definitely find something enjoyable.

I hated it at the time but in hindsight I realized two things:
1) how important the fundementals actually are
2) creativity is born of imposed constraints.
I fricking hated still life and the only way I could get a creative element was to reframe my composition.
