I fired up Pikim and cranked the internal resolution to 4k and 16x AF, no other changes. Looks great to me.
A lot of these old games have superior art direction and age really well and look great at high resolution.
A lot of new stuff is filled with visual noise.

Nothing is stretched in the other image. It's the original aspect ratio rendered at a higher resolution. The main difference is any model will be rendered more smoothly, less jaggies

And? It'll look the same no matter the render resolution as long as the aspect ratio stays the same.
Graphics unironically peaked in the 6th gen. It was the sweet spot where the hardware was powerful enough to show pretty much anything you wanted to, but not powerful enough that you could get away with adding a frickton of superfluous post-processing effects and other visual bloat.

They focused in artstyle and completely ignored the level design and dungeons. Wind Waker is stil good but has some of the weakest dungeons in the series.

Nothing wrong with any of that, save the texture packs. Original textures don't look great when upscaled, but they're fine still.

You made the right call. As a 36 year old Millenial BOOMER, I played the original Gamecube version a long time ago and heard pretty bad things over the years about the other ports and DEMASTER.
