Depends on the game.
In FE7 and 8 they are basically just worse wyvern knights except 1 who has staff utility and comes trained
In FE9-10 they are also worse than Wyvern except one which has staff utility and comes trained

In awakening they have the niche of being able to branch off into a magic class
In fates they use staves so they finally serve some utility
I don’t remember what they had in 3h, im pretty sure that they just upgrade to wyvern rider, same goes with engage.
Peg Knights in the Archanea games (FE1/FE3/Shadow Dragon/New Mystery) are the unpromoted forms of Wyvern Knights, so they are literally just worse versions of wyverns

Palla usually goes Wyvern instead of Falcon, it doesn't help that the elysian whip is very missable buried treasure.
Same with Chloe, there's no falcon knight class so she has to choose between Griffin and Wyvern as promotions
Wyvern Chloe is mediocre, Griffin is better in the long run.
