Switch is not so surprising to me after Nintendo decided to port Skyrim and other old as frick 3rd party titles. The ps4 release is the confusing one, since it was once available on PS Now. I could understand if it was a remake for the PS5, but why waste development on bringing that game to the PS4 now?

how easy the porting is depends on how ambitious your game is.

No, the contract meant wienerblocking PC only. Sony actually tried to own GTA at one point, and get it exclusive for a few months over Xbox, but since those didn't work, they figured the next best thing is to ban this one neutral competitor which doesn't have any big corporation shilling behind it.
Microsoft also similarly paid for Skyrim DLC and exclusive Skyrim marketing. PC ended up being the biggest platform by faaar, yet somehow magically Xbox was constantly in the limelight for that game. What do you think?

The word exclusive means nothing. They say game is exclusive on Xbox, yet it's on PC. PC doesn't count because it's a neutral platform. It's easy to ban it under the table since it's not even anticompetitive - PC isn't a corporation primarily invested in gaming.
Rockstar wised up though, and realized that whatever greedy Sony/Microsoft could offer would not be more than RDR2 on PC, and they were right.
Since RDR2 sold so well, and they are now porting RDR1 everywhere, there's literally ZERO, NADA reason to not port it to PC, unless there was some clause still in effect.

PC and current gen PS and Xbox will get the high-spec "remaster" with more detailed graphics (pajeet upscaled graphics).
PS4 and Switch get the original because they'll be too weak to run the "remaster" (not inherently, but it saves Rockstar of David some effort to not have to optimize for them).
PC doesn't get both versions because they want you to buy the newer, "better" version, and they want to mitigate people pirating the original when the remaster comes out and sucks balls.

It was signed during development. Rockstar knew they made a mistake so that deal was never made for RDR2. There's no reason to think RDR1 wouldn't have sold well on PC. The fact that they now keep porting it everywhere further cements the idea that they deliberately prevented themselves from porting it to PC, which is bigger than all those platforms they are now porting it to.
