So you don't get over leveled. That's the problem with "but you can just not do these things and limit yourself!" difficulty, it just turns into gimping the overall experience. Being able to turn off xp gains at will or have level caps based on progress would achieve the same thing without skipping most of the game
Or in gen 8's case, disable exp all.

Only way to introduce some challenge is to nuzlocke with a no items rule and this clearly just not the intended way to play.

The mainline games are easy if you have already played another Pokemon game before, if you want a bit of challenge you need to try the olders Mystery Dungeon games and Colosseum/XD.

Stat boosts are generally useless in singleplayer though. Opponents die in one-two hits, so all you're really doing is wasting a turn.
Best you get is situational uses of the x stat items (particularly defensive ones) since you at least don't have to waste a moveslot on them.
They are useful in difficulty hacks, but those aren't relevant here.
People argue against using healing items in battle because otherwise you have a functionally inexhaustible supply of HP.
They're good for challenge runs.
