You can argue that From always had obtuse storytelling but when you came right down to it, Dark Souls lore made sense, mostly, maybe there's a few contradictories areas but nothing you can't smooth over or charitably excuse as diverging vision over nearly 10 years between the first and last game. Sekiro made sense too. Bloodborne don't seem to trouble people much. But ER is honestly a mess and anyone pretending otherwise is just confusing the truth (or lack of) with their own headcanon.

Or why no one mentions Radahn eventually returning when they gear up to kill him. Or why there's no mention at all of any other god that died once and came back in the game. Or no mention of any character that died and came back besides us and the other Tarnished, of course. And then the process seems fairly instantaneous

As for Morgott transformation, nothing is outright stated, but there are some options.
Maybe the Omen curse is in the blood, and he completely spent himself while fighting the Tarnished. Or maybe he redeemed himself in the eyes of the Greater Will and was granted his biggest wish in his death in the name of the Golden Order.
