Generally for a lot of games you don't get enough information from still images, you actually need to see the animations and movement to get a feel of the artstyle, a simplistic artstyle might mean there was more care put into animation that displays feelings and movement eloquently.
This one looks even fricking worse, it's like a teenager's first flash animation.
To be fair, I didn't like the special edition either. It looked way to clean and smudged. But compared to what we have now it's a fricking masterpiece.

Secret of Monkey Island hasn't aged that well and the remaster is nothing more than an art face lift with an unintuitive control scheme. LeChuck's Revenge is a very good remaster with a proper verb coin and a nice art style. You can switch to classic mode in both but only MI2 has voices in classic mode. Curse and Escape are not remasters but still are fun additions to the series. Although Escape definitely has some bad moments
Just get Curse. Nothing after it is worth playing and you should only revisit the earlier games if you liked that one. Starting with the first game is likely just going to turn you off.

Think about it: There have been 5 games thus far and he only played a role in the first 2. The third game, which has come to represent the series with its specific takes on the characters and the look of the world, has sold an order of magnitude more than the originals, reached far more people, and anyone claiming to be a "fan" has very likely played it, and might not have even played the first two. Only, it wasn't his game. It was some bastardization of something he created, now known the world over for something he had nothing to do with.
Maybe he just wants to destroy it. It's all canon because he wants to make sure no fan gets out unscathed. It's payback time.
